Banana Nut Macro Cookies

After making a batch of Oatmeal Raisin Cookies this morning, I had the crazy idea of trying out a new recipe I'd been tinkering with - Banana Nut Cookies.  You know...eating the flavor of banana bread, but in a form of a cookie.  Surprisingly these turned out pretty well for the first try.  I think now that I have my standard cookie formula, it's so much easier to create new flavors - all I have to do is adjust the ratios in the recipe to account for the different ingredients.

This cookie turned out very moist and sweet, and I can imagine how delicious these cookies will be the next day after the flavors have had time to set - the flavors will definitely deepen and intensify, and the cookie would have a bit of a moist yet slightly chewy and delicate texture.

The best part - these cookies turned out to have the lowest calories - only 52 calories each - and packs 4g of protein and only 2g of sugar per cookie!

If you love banana bread, you'll absolutely go bananas for these macro cookies!  Enjoy!


(makes 24 cookies)

4 scoops banana-flavored protein powder (Quest brand recommended)
1/3 cup oat flour
1/4 salt
1/2 baking powder
1/2 baking soda
1/4 cup Truvia Baking Blend
3 tbsp. Smart Balance Light butter spread
3/4 cup bananas, pureed
1/2 cup unsweetened apple sauce
1/3 cup walnuts, chopped

1.  Preheat oven to 350 degrees F.
2.  In a large mixing bowl, sift protein powder, oat flour, salt, baking soda and baking powder and mix until well-combined.
 
3.  In a separate bowl, combine butter spread and Truvia baking blend until well-combined, then add pureed bananas, apple sauce and vanilla extract.  Mix until well-combined.
4.  Add wet ingredients into the bowl with dry ingredients and combine.
5.  Add walnuts and water in bowl and mix until well-combined (the final consistency should look like melted ice cream).

6.  On two baking sheets that are lightly sprayed with oil, use a medium-sized cookie scoop and space each cookie approximately 2 inches away from each other.

7.  Bake for 12-15 minutes or until golden brown.
