The first time I had green tea white chocolate macadamia nut cookies was at Schmackery's in NYC - I wanted to venture from my usual favorite maple bacon cookie and try something new - when I spotted these on display. Since I've always had a fondness for white chocolate macadamia nut cookies, I figured that it was worth a shot.
And boy, what a shot it was - it was such a perfect flavor - the earthiness of the matcha complemented the sweetness of the chocolate and the buttery richness of the macadamia nuts - that my taste buds felt like they exploded with excitement.
I definitely never forgot that flavor, and somehow I wanted to still replicate that flavor and make it in macros. In order to create these, I played around with vanilla whey/casein protein powder and mixed oat flour, matcha powder, and some of the usual suspects (yes white chocolate & macadamia nuts), which resulted in these moist and scrumptious cookies.
This may be a stretch for some of you, but I assure you, these are absolutely delicious!
5/14/2016 - I FINALLY finalized the recipe - I now have a cookie that I absolutely love! The updated recipe is below. Enjoy!
(makes 18 cookies)
5 scoops vanilla protein powder (Quest-brand recommended)
1/3 cup oat flour
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
3 tbsp. green tea matcha powder
1/2 cup water
1/2 cup Truvia Baking Blend
1/2 tsp. vanilla extract
1/4 cup egg replacement (Egg Beaters or similar brand recommended)
1/2 cup unsweetened apple sauce
1/3 cup white chocolate chips
1/3 cup macadamia nuts, chopped
1. Preheat oven to 350 degrees F.
2. In a large bowl, sift protein powder, oat flour, salt, baking powder, and baking soda and mix until well-combined.
3. In a separate bowl, add green tea powder and hot water and whisk until tea has dissolved and created a bright green color.
4. In the same bowl as the green tea mixture, add Truvia Baking Blend, vanilla extract, egg replacement and apple sauce and mix until well-combined.
4. Pour the wet ingredients in the bowl containing the dry ingredients and mix until well-combined.
5. Add white chocolate chips and macadamia nuts and mix until well-combined (the final consistency should look like melted ice cream).
6. On two separate baking sheets lightly sprayed with cooking oil, use a medium-sized ice cream scoop (holds 1.5 tbsp of dough) and neatly line up the balls of dough, leaving approximately 2-3 inches of space between each cookie ball.
7. Bake for approximately 10-12 minutes until slightly brown.
