It's been almost a month since I posted a recipe - life has definitely gotten really hectic on my end that blogging has been on the back burner... but it hasn't stopped me from creating! :-)
I've been toying around with a turtle-flavored brownie from sometime now - you know, that delicious combination of chocolate, caramel and pecans - that I was inspired today to try it out. Even though I had been cooking all weekend creating lots of new and delicious dishes, I couldn't resist making a test batch. And the best part was, the first test batch was a success!
Luckily enough, I was able to use my Chocolate Peanut Butter brownie recipe as a template and altered the ingredients to fit this flavor profile. Because both of these brownie recipes are so delicious, I have a hard time choosing which one is better than the other...
In order to add as much pecans in this brownie as possible without sacrificing the moistness of the brownie, I removed all of the canola oil and relied on using apple sauce and liquid egg replacement. In order to get that nice caramel flavor, I decided to use my favorite Quest protein powder flavors (salted caramel) as the "caramel" base for this brownie (luckily enough, it worked!). :-)
So there you have it - a nice, delicious and sweet brownie without the added junk (and only 59 calories per piece!). Enjoy!
(makes 24 brownies)
For the chocolate batter:
2 1/2 scoops vanilla-flavored protein powder (Quest brand recommended)
1/3 cup oat flour
1/2 cup Truvia Baking Blend
2 packets no-calorie sweetener
3/8 cup unsweetened cocoa powder
1/2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. vanilla extract
1/4 cup liquid egg replacement (Egg Beaters brand recommended)
1/2 cup unsweetened apple sauce
1/2 cup water
5/8 cup chopped pecans
For the caramel batter:
2 scoops salted caramel-flavored protein powder (Quest brand recommended)
1/2 cup water
1. Preheat oven to 350 degrees F.
2. In a large mixing bowl, sift vanilla protein powder, oat flour, Truvia Baking Blend, cocoa powder, baking powder, no-calorie sweetener and salt until well-combined.

In the same bowl, add vanilla extract, egg replacement, apple sauce, water and pecans and mix until mixture is smooth and there are no
lumps.
4. In a 9" x 13" baking pan, pour in mixture and smooth out all air bubbles and lumps with a spatula. Set aside.

In a smaller bowl, mix caramel protein powder, and water and mix until mixture is smooth
and there are no lumps.
6. Pour caramel mixture in spoonfuls over chocolate mixture. To create a marble effect, swirl a butter knife in the pan.
7. Bake in the oven for 15-20 minutes or until a toothpick inserted in the center comes out clean (to test doneness).
